I got the idea for munchies cookies bars when I was thinking what if we had a cookie that also perfectly satisfied what people want when they have the munchies. A little salty junk food, but something rich and chocolatey. Thus, munchies cookies bars were born! They’re somewhat similar in concept to kitchen sink cookies, if you’ve heard of those.

These munchies cookies bars are very easy to make. You make a batch of cookie dough, fold in all the great mix-ins, and bake it up. The technique that might be challenging here is making your own toffee bits, but if you want to get storebought toffee bits you can easily do that, too!

How to Make Munchies Cookies Bars

1. First, you’ll make the toffee bits. If you don’t want to do this step, you can just buy toffee bits at the grocery store or on Amazon. To make the toffee bits, we’re going to follow a recipe from Handle the Heat. You’ll melt the butter over medium heat, then add brown sugar and kosher salt and stir constantly for about 5 minutes until it looks like thick, melted peanut butter. The butter may separate from the sugar as it cooks – if this happens, just keep stirring to bring it back together. You’ll pour the toffee onto a parchment-lined baking sheet, let it harden and then break into bits.

2. Now we’re ready to make the bars! You’ll preheat the oven and mix together your dry ingredients in a medium-sized bowl. Set aside.

3. Whisk together the melted butter, brown sugar and granulated sugar until combined. Mix in the egg and vanilla extract.

4. Fold the dry ingredients into the wet ingredients. When the flour is almost completely incorporated, add in the mix-ins, reserving some to sprinkle on top before baking.

5. Press the dough into a greased or parchment-lined 8×8 pan. Sprinkle some remaining mix-ins on top. Bake for 20-25 minutes, until the bars are golden brown on the edge and just turning nice and golden on top.

Ingredients

  • For the Homemade Toffee Bits
  • 4 TBS. unsalted butter

  • 1/2 cup (107 grams) brown sugar

  • 1/2 tsp. kosher salt or another coarse salt

  • For the Cookie Bars
  • 1 1/4 cup (150 grams) all-purpose flour

  • 1/4 tsp. baking soda

  • 1/4 tsp. baking powder

  • 1/2 tsp. kosher salt or another coarse salt

  • 1/2 cup (113 grams) unsalted butter

  • 1/2 cup (107 grams) brown sugar

  • 1/4 cup (50 grams) granulated sugar

  • 1 egg

  • 2 tsp. vanilla extract

  • 1 cup chocolate chips or chopped-up chocolate

  • One normal size packet of peanut m&ms

  • 2 handfuls potato chips, slightly crushed

  • Heaping 1/2 cup toffee bits

  • Flaky sea salt to top (optional but recommended)

Directions

  • First, make the toffee bits (you can also buy them in a grocery store or on Amazon). In a small saucepan, melt the butter. Add in the sugar and salt and whisk continuously for 7-10 minutes, until it looks like thick, melty peanut butter. If the butter separates from the sugar, take off the heat briefly and keep whisking vigorously. Pour the toffee onto a parchment-lined baking sheet. Let cool for about 20 minutes. Using a rolling pin or other heavy object, crack the toffee into bits.
  • Preheat the oven to 350°F. Grease an 8×8 baking pan or line with parchment.
  • Whisk together the flour, baking soda, baking powder and salt to a medium-sized bowl. Set aside.
  • In a large bowl, whisk together the melted butter, brown sugar and granulated sugar until they’re well combined. Add the vanilla and eggs and whisk well.
  • Fold the dry ingredients into the wet ingredients until it’s just combined. Add in the chocolate chips, peanut m&ms, potato chips (lightly crush them as they go in) and toffee bits. Reserve a few of the add-ins (except the potato chips) to press on top.
  • Press the dough into the prepared baking pan. Add some of the reserved add-ins on top. Bake for 20-25 minutes, until the bars are golden brown on the edge and just turning nice and golden on top.
